In the bottom of an old-fashioned glass, carefully muddle the sugar, Angostura, 1 orange slice, 1 cherry and a splash of water or soda.

Remove the orange rind and add the bourbon, ice and, if you like, water and soda, but be careful not to drown the drink.

Garnish with the remaining orange slice and cherry.
Muddling: The mashing of fruit with herbs, sugar or liquor in the bottom of a bar mixing glass to bring the flvoour of the chosen ingredients out within the cocktail.
The Old Fashioned was created at the Pendennis Club in Louisville, Kentucky. There are two warring camps of Old Fashioned drinkers: those who muddle the fuit and those who don't. Dale DeGroff, author of The Craft of the Cocktail, belongs to the first camp, as the muddling adds so much flavour. Others just want some sweetened whiskey, not an Old Fashioned. The 1862 Whiskey Cobbler - the Grandaddy of this drink - was shaken with two peices of orange in the bar glass, so we have history on the muddling side.
