The Bacon and Egg Martini was created after I staged at Le Manoir for 2 months. I fell in love cook books and Hestons "FAT DUCK" is still a favourite.

The simple twist on a gelato made a load of sense (egg yolk enriched ice cream), a simple sour would fit (sub the whites), bourbon perfect for fat washing the smoked bacon, maple perfect for beacon and so on.

It was a bit of a joke at the time but managed to explode across the world from GQ to BA high life.

50 ml Bacon Infused JD No 7
20 ml Maple Syrup
20 ml Fresh Lemon Juice
1 Egg White
1 dash(es) Angostura - Aromatic Bitters
1 dash(es) Angostura - Orange Bitters
