Method:
Shake vigorously with lots of ice in a boston shaker and strain into a chilled cocktail glass.
Notes:
Pre-dilute the honey with water to obtain the syrup (1 part honey for 1 part water. Mickael Perron commented, 'One of my favorite pre-dinner drinks is the Negroni (Gin, Campari and sweet vermouth) because the bitterness of Campari helps to open the appetite. As a bartender, I often used to suggest it as a pre-dinner, but the sharpness of the mix was sometimes too strong for my guests. That's why I created the 'Bitter Lady' cocktail, a perfect aperitif for those who prefer an easier drinking start. You will still enjoy the sharpness of Campari, but the honey will give an interesting sweet edge to the taste, and the secret reign with the use of egg white, an essential ingredient to create a well mixed sour cocktail. With the Bitter Lady, you can now really enjoy an aperitif containing Campari and Gin, and you will surprise more than one or more Negroni drinkers.'
