Squeeze the oil from a piece of orange skin then put into a tumbler.
Add the sugar and bitters and a splash of Appleton 12. Add one ice cube and start to stir the drink. When the ice cube has started to melt and the sugar is dissolving, add another ice cube, another splash of Appleton and continue to stir.
Continue in this manner until all the rum is in the drink and the sugar is fully dissolved.
Spray the surface of the drink with the oil from the remaining piece of orange peel and drop it in the drink with a maraschino cherry for garnish.
Ian's favourite cocktail. (But only on a quiet night takes too long to make right.
