Ricardo's Bio.

"Where do I start? I like most fell into the industry at a tender age of 14 in Bury just outside of Manchester collecting glasses for £1.34 an hour at the Bolholt Hotel, great days, until I Up graded to the local "cool" pub "the welly" where I continued to collect glasses. 4 Years of glass collecting later and I was on the Bar.

Never made a cocktail till I Learned my "craft" in Faliraki. 3 years there being a reprobate on the Island I moved to Leeds to be a Reprobate there. Working in almost every decent bar the city had to offer before settling down with Jake Burger in 2008 as GM of his "Jakes Bar and Grill" as it was known back then. Now called Jakes Bar a Stillroom. While at the stillroom I taught myself Distillation on Tabatha our 30litre Copper pot still.

I was on the verge of my own products, I have a few under my belt so watch this space, but then a transfer to the Portobello star in August 2013 meant I was of too London to GM the Star. 6 months later and I'm now here with Absolut.

Q&A

What do you as a mixologist think about beer? Any brews of note for you?

I love beer, most bartenders drink beer and shots, and I'm a bartender. I do not refer to myself as a mixologist. Mixology is something I and many other bartenders do. Mixologist sounds Soulless and I'm proud to simply be labelled a bartender!! But as for the question you can't beat an ice cold bottle of Heineken.

If you could offer a couple of short pieces of advice to the average bartender, what would they be?

You will never know everything. No one will, it's a fact, so don't be one of those guys who thinks they do. Cause they don't either. Your always learning so be humble. And secondly, don't forget we put liquid in a glass so leave your EGO at home. There are so many aspects to bartending that no-one really can ever be the best.

Surely you have some pet peeves about bartenders -- care to share?

I think I cleared up that in the last question. I hate prima-donnas in the industry. It really is my biggest hate of then all!!!

As a mixologist/consultant, you work directly with many restaurants on their drink menus -- describe the parts of this process.

How did you get started?

I got started in the bar industry simply because of the need of money.

How were you trained in bartending?

I trained myself like most through reading and observation of the guy next to me

Did you take any courses?

No.

What are some trends you're seeing in the market?

Clarified drinks I believe can sometime be quite fantastic. The Clear Colada at the London Edition is a perfect example of this being executed to perfection.

What's your process for creating a new cocktail? And what inspired you in the first place?

8. When I start to create a new cocktail it really depends on the reasoning for the drink. Is it going on a menu, is it drinks for a new product, is it drinks for a brief or has someone just given me a funny name to work from. All these factors could be the inspiration for the drink also in the first place. It quite hard making a new drink at the moment. I also search the internet just to make sure no-one has already made this drink I have just thought up. This happens a lot.

What is your favourite cocktail to make?

I love making Daiquiri. Simplest and the best but I do get some pride when making martinis. They are such a personal preference that when you nail it for a customer it's a great feeling.

What are some of your favourite tools?

I love spoons!!!!

What is your favourite mixology resource?

My favourite mixology resource is google. Pretty much the best there is without even trying.

What does success mean for you?

Success = Happiness

Where do you see yourself in five years?

In five year I would like to be The Absolut Global brand Ambassador, I'd like to get that before the 5 years is up though.

If you weren't in the drinks industry, what do you think you would be doing now?

I'd probably be doing something with skateboarding. That is my first and true love. Whether that be working for a brand or magazine or have my own shop. That is where I would definitely be.

Your biggest career influencer?

Biggest career influencer would probably be my friends and peers within the industry. They are like family and not many people have that feeling when going to work.

First drink you ever tried?

Glens Vodka, 1 litre bottle, 14, Centre parks Nottingham. My mum was well pleased!!!!

We've all had a bad experience with at least one drink. What drink do you most avoid?

Your hangover cure?

Hangover cure, there is no cure, you just gotta man it up. I'm the worst with a hangover. I never man it up!!

£10m comes to you. What do you do next?

With £10m10m first of make sure my family has no debts. Buy a little house near my mum, buy one in London. Then spend the rest of my days travelling the world with a skateboard till I get bored or settle down.

Bar or cellar at home?

Bar at home. It's how I would roll.
