Defaix Chablis displays minerally, flinty notes on the nose with touches of green apple.

The palate is elegant, dry and characterised by crisp, citrus flavours overlaid with smoky notes.

Long, complex finish.

Perfect with appetizers and cold meat platters.

Enjoy now or will cellar for 2-3 years.

The wine is kept on its fine lees for 8 to 12 months.

The lees are regularly moved around during the six first months to enrich the structure of the wine.

The vinification is entirely done in stainless steel tanks to preserve the freshness and the typicity of the wine.

Then the wine is bottled.

Producer Information

Bernard Defaix, fourth generation of a family of vine-growers, started in 1959 with 2 hectares. At about this time, the first techniques for protecting vineyards from spring frosts were discovered.
The domain stretches over 26 hectares: Chablis Premier Cru (Cote de Lechet, Vaillons and Lys), Chablis and Petit Chablis.
Over the years, Bernard and his wife Monique have acquired new land. Their efforts duly enriched the domain, which now included some of the best named places of the Chablis region.
Today, true to the family tradition, the domain is run by Sylvain and Didier. Bernard nevertheless continues to provide his expert advice to his two sons. Didier looks after the vineyards, sales and marketing, and the accounting. Sylvain is in charge of all the wine making, ageing, bottling and orders. Helene, Didier's wife, works with us since 2002 for the sales and the administrative part.
