Vineyard The vineyards lie at 45-60 metres above sea level, with a rocky limestone soil. The vines were propagated at the on-site nursery, set up in 1994 mainly to provide Vermentino.
Winery After destemming and a light pressing, the must was cooled to 10°C for natural settling. The must was then transferred to temperature-controlled stainless steel vats, where alcoholic fermentation took place at up to 16°C. In order to preserve the delicate aromas, the wine was kept briefly in steel tanks at a low temperature, before filtration and bottling.
Taste This shows the combination of crispness and breadth that marks Vermentino, with engaging citrus flavours and a long mineral finish.
