Description:
Hollick Wines have been making Pinot Noir from their Coonawarra vineyards since 1986. The Coonawarra vineyard produces wonderful cherry characters in Pinot Noir due to the long cool growing period experienced in this southerly site.

Early spring rains after a dry winter promoted excellent budburst and flowering. The cool conditions in February allowed good flavour development, and when heat was forecast for March they took advantage of the cool mornings to harvest the fruit.

A portion was hand harvested to allow some whole-bunch fermentation. In an additional effort to maximise complexity, traditional Burgundian winemaking methods such as cold soaking, natural fermentation and extended skin contact were implemented. The wine was matured in a combination of new, one and two year old French oak barrels for 9 months which has enabled the vibrant fruit flavours to come to the fore..

Bright plum red, with aromas of Rose petal, cherry, strawberry and forest floor with some herbal notes.

An elegant wine with smooth and supple flavours of cherry, strawberry and plum. It's long, fine and silky, with musk, mushroom and cinnamon supported by soft tannins and exceptional balance.

Producer Information

Hollick Wines is a small family owned winery in Coonawarra, in South Eastern South Australia. Ian and Wendy Hollick purchased a piece of grazing land on the southern end of the Coonawarra district in 1974. This small block of land was one of the original allocations in the Coonawarra Fruit Colony which John Riddoch founded in 1890. It was never developed as a fruit block but instead was the site of a tannery, and later a dairy.
Since 1975 the Hollicks have progressively planted Cabernet Sauvignon, Riesling, Chardonnay, Merlot, Pinot Noir and Cabernet Franc. Production from the original Hollick vineyard was initially sold to other wine makers until 1983, when Ian and Wendy decided to produce their own label and build a winery.
In 1983 Ian and Wendy lovingly restored the original slab cottage located on Neilson's Block which remains at the entrance to Hollick Wines today. This Heritage Listed cottage dates back to the 1860's and was the birthplace of famous lyric poet John Shaw Neilson. Cellar Door Sales were carried out in the cottage until 2002. In 2002 a new cellar door sales area and restaurant were built to fulfil the demand for a winery restaurant in Coonawarra. The integration of old and new has been outstandingly successful making Hollick a 'must see' in Coonawarra.
As first generation winemakers, the Hollicks had no family traditions to hamper them, and set about producing wines using modern production techniques. Hollick Wines launched onto the national and international wine scene by winning the 1985 Jimmy Watson Trophy at the Royal Melbourne Wine Show. Demand for the Hollick product was such that expansion was necessary, and in 1987 Ian and Wendy Hollick purchased the nearby "Wilgha" vineyard, to supplement their existing production. In 1998 the Hollicks developed their vineyard in the neighbouring region of Wrattonbully, adding further diversification and regional variation to the portfolio. Further plantings of Shiraz, Sauvignon Blanc, Semillon, and Petit Verdot, and even more recently Tempranillo, Sangiovese, Barbera and Savagnin have also taken place.
Ian\'s expertise in viticulture has seen him as an industry leader, and the Hollick team place special emphasis on producing only premium fruit. The small, modern winery is designed around winemaking methods which produce wines of distinction, showing distinct regionality and specific vineyard and varietal characters.
Hollick Wines have adopted the slogan 'Pride of Place' to reinforce the emphasis on the individual vineyard characteristics. Not surprisingly, the production from Hollick is eagerly sought each year.
Driven by quality and a hands-on approach, today, Hollick wines continue to be made from three core vineyards. Neilson's Block, planted by Ian and Wendy Hollick in 1975, the nearby Wilgha Vineyard, purchased in 1987 and further developed since, and the Wrattonbully Vineyard developed in 1998 giving Hollick over 200 acres of premium vineyard in total.
Hollick wines are now available throughout Australia and are currently available in the United Kingdom, Germany, Belgium, Netherlands, Singapore, Hong Kong, Canada, China, Malaysia, and New Zealand.
