A clear yellow coloured wine with green highlights.
Available 14th Mar 2014
Full-flavoured with aromas of flowers, citrus fruits, aniseed and fennel.
In the mouth, the typical acidity of Picpoul de Pinet. Very fresh, its originality comes from its volume and mellowness, and also from its long persistance (about 7-8 seconds)
The vineyards, aged of 5 to 25 years, are situated on our three terroirs. Each one gives his typicity. Felines, the citrus notes and the freshness of the balance. La Coulette, the aniseed and fennel aromas and the roundness. Les Cadastres, the exotic fruits and flowers aromas. By blending Piquepoul from those three terroirs, we have created our Picpoul de Pinet.
Vintage of the grapes at 13% vol at the end of September. Mechanic graping, racking, pneumatic press, slow fermentation at 17 to 18 degrees centigrade. The wine stays on its lees 3 months before filtration and bottling.
Shell-fish especially oysters. Fish with lemon. Fresh cheeses. Asparagus.
