Vinification - Between 3 and 15 October, following an initial quality selection in the vineyard, the clusters were hand-picked into small 12-kg boxes and brought into the cellar, for a total of some 1,850 quintals.

The clusters were quality-graded again on sorting tables, then de-stemmed and pressed. The must, kept separate for each grape variety, fermented in steel at about 30-32oC, with repeated daily punch-downs. A 21-23-day maceration followed, After racking, the 1,300hl of wine completed its malolactic fermentation.

Maturation - Towards mid-December, the lots of wine were assembled into the final blend and put into oak barrels, 20% new and the remainder previously used, where it rested for12 months.

The 65.38-hectare specialised vineyard, enrolled in the official Chianti Classico DOCG Registry, lies at elevations ranging between 390 and 530 metres, planted in quite rocky limestone-clay soils.

The vineyards planted in part between 1974 and 1978 have a density of 3,000 vines per hectare, while those that were planted from 1996 on to replace outdated vines--a process that continues today--display a density of 5,300 vines/ha.
The vines, all vertically-trellised, are trained to the open lyre system and pruned to Guyot and spurred cordon.

The varieties, grafted onto 420A rootstock, are 80% Sangiovese and 20% Malvasia Nera, Merlot, and Cabernet Franc.

Producer Information

Ama is small hamlet nestled among gentle hills, in the commune of Gaiole in Chianti, in the province of Siena.
At some 500 metres elevation, it lies in the heart of the Chianti Classico storico zone, where vineyards and olive groves and woods weave intricate intersecting patterns among themselves.
The winery, begun in 1972 as a result of the love of four families from Rome, currently comprises some 250 hectares, of which 90 are in vines and 40 in olives trees, growing at an average altitude of 480 metres.
Annual production, exclusively from our estate vineyards, amounts to about 300-350,000 bottles, or some 3,500-4,000 bottles per hectare.
The winery standard-bearer is Castello di Ama, a wine produced by a rigorous selection of sangiovese grapes from the most outstanding vineyard parcels.
