An intense, nervy white with concentrated, crisp citrus notes.

The palate is well balanced with rounded, green apple flavours and a minerally, steely finish - a wine of great typicity.

Food recommendations: Perfect with poultry and fish.

Enjoy now or will cellar for 5-10 years.

This wine comes from several plots situated on the Cote de Lechet.

It is aged on its fine lees during 9 to 12 months. The lees are regularly moved around during the six first months to enrich the structure of the wine.

The blend of the different cuvees is done after a tasting in order to obtain an homogeneous final cuvee.

The vinification is done for 10% in oak barrels and 90% in stainless steel tanks.

The wine is then bottled.

Producer Information

Bernard Defaix, fourth generation of a family of vine-growers, started in 1959 with 2 hectares. At about this time, the first techniques for protecting vineyards from spring frosts were discovered.
The domain stretches over 26 hectares: Chablis Premier Cru (Cote de Lechet, Vaillons and Lys), Chablis and Petit Chablis.
Over the years, Bernard and his wife Monique have acquired new land. Their efforts duly enriched the domain, which now included some of the best named places of the Chablis region.
Today, true to the family tradition, the domain is run by Sylvain and Didier. Bernard nevertheless continues to provide his expert advice to his two sons. Didier looks after the vineyards, sales and marketing, and the accounting. Sylvain is in charge of all the wine making, ageing, bottling and orders. Helene, Didier's wife, works with us since 2002 for the sales and the administrative part.
