Q & A

What do you as a mixologist think about beer? Any brews of note for you?
I love beer, literally all of them, the best are from micro brewery's such Brewdog.

If you could offer a couple of short pieces of advice to the average bartender, what would they be?
Work hard and learn as much as you can.

As a mixologist/consultant, you work directly with many restaurants on their drink menus -- describe the parts of this process.
In Coq D'Argent we change the menu seasonally, we all team together and discuss ideas, we experiment and waste of alcohol a lot. Sometimes I have directions from the marketing people to create cocktails such as a "Healthy Cocktails in January" menu.

How did you get started?
The O2 Arena, when it was reopened after Dome. There was fantastic bar called RAAN (unfortunately it doesn't exist any more).

How were you trained in bartending?
By other bartenders, bar managers and I always read some books.

Did you take any courses?
In Poland the Bartender Association 1st level & over here the UKBG 2nd level.

What are some trends you're seeing in the market?
Fantastic new spirits to play with like Polugar.

What's your process for creating a new cocktail? And what inspired you in the first place?
Sometimes I can wake up and have idea in my head already, sometimes I read books about flavours and sometimes some dishes I have try. It's all about experimenting and finding the right balance.

What is your favourite cocktail To make?
Old Fashioned.

What are some of your favourite tools?
I have a couple of old silver shakers.

What is your favourite mixology resource?
A book called "The Flavour Treasures".

What does success mean for you?
Being appreciated by my boss and colleagues.

What are some current trends you've seen in the cocktail market?
Home made ingredients, bartenders can create amazing stuff.

Where do you see yourself in five years?
Running my own Bar.

If you weren't in the drinks industry, what do you think you would be doing now?
I wanted to play football, or be a kitchen chef.

Pawel Rolka.

First drink you ever tried?
Definitely vodka, I'm from Poland.

We've all had a bad experience with at least one drink. What drink do you most avoid?
I barely drink vodka now, I found flavoured alcohol more interesting.

Your hangover cure?
My grandmothers broth soup.

£10m comes to you. What do you do next?
I will buy an old church, transform it into bar, in the tower I'll install a pot still to distil and I'll sell my own spirits.

Bar or cellar at home?
Oh yes, mainly bar, it's tough to keep a cellar full.

Favourite beer?
Wheat beers, mainly Erdinger.

Gevrey Chambertin.

All Islay single malt.

Sky bar and Lebua State Bangkok.
