What do you as a mixologist think about beer? Any brews of note for you? Beers are getting so much more interesting and they’re amazingly creative with ingredients branding and styles. Beer Bera is one to note for me.

If you could offer a couple of short pieces of advice to the average bartender, what would they be? My advice would be never stop craving more, London is one of those places where information and ingredients are at your fingertips.

Surely you have some pet peeves about bartenders -- care to share? Negative attitudes! Can bring down a team.

As a mixologist/consultant, you work directly with many restaurants on their drink menus -- describe the parts of this process. It starts off by making sure that the drinks list is in line with the bar restaurants image and then we go on from there to make sure the GP is where we want it to be, and finally making it efficient to serve.

**How did you get started? The bartender didn’t turn up for the shift and ended up doing a bar shift. It all carried on from there.

How were you trained in bartending? Mostly trained myself until I ended up moving to London and then landing jobs with Bar managers who were exceptionally good at sharing knowledge.

Did you take any courses? WSET.

What are some trends you're seeing in the market? Clarified drinks.

What is your favourite cocktail To make? Missionary’s Downfall.

What are some of your favourite tools? Swizzle Stick.

What is your favourite mixology resource? Flavour Thesaurus.

What are some current trends you’ve seen in the cocktail market? Low ABV and Tropical Drinks.

Where do you see yourself in five years? Back living island life.

If you weren't in the drinks industry, what do you think you would be doing now? Teaching.

Your biggest career influencer? Too many to mention, but as a general trait, they usually are the host of the party.

First drink you ever tried? Boulevardier

We've all had a bad experience with at least one drink. What drink do you most avoid? Last Word.

Your hangover cure? Piña Colada.
