"I started bartending in Athens back in 2001 while studying Tourism Management at T. E. I. Athens. After working for many years in hotels located in Mykonos and Athens, I moved to Glasgow in March 2016. I started working at The Anchor Line a few months later, I became bar manager at the Atlantic Bar and Brasserie in St Vincent Place."

Q & A
What do you as a mixologist think about beer? Any brews of note for you?
Beer will always be in the core of all social activities from gathering with friends up to the most formal ones. From I.P.A or stout reductions to topping up Mixed drinks, a good beer can be a key cocktail ingredient.
If you could offer a couple of short pieces of advice to the average bartender, what would they be?
Listen, study, practice. Don't be afraid to fail. Stay humble.
Surely you have some pet peeves about bartenders -- care to share?
Arrogance. No matter how great your drinks are at the end of the day we are here to provide a service and make people happier.
As a mixologist/consultant, you work directly with many love on their drink menus -- describe the parts of this process.
It starts with the concept behind the restaurant and its volume. Clientele. Style of drinks, glassware. Research on products and suppliers. Competitors and trends. Flavour and GP.
How did you get started?
Working as a barista at the time, being called to cover a bartenders shift on a Saturday night. The first cocktail order must have taken ages to be prepared!
How were you trained in bartending?
Mostly self-taught and lucky enough to work beside some of the best guys back home. Loads of seminars and tastings too.
Did you take any courses?
Basic bar knowledge at the Institute I was studying Tourism Management
What are some trends you're seeing in the market?
Low Abvs are here to stay, and I think we are going back to less is more in terms of ingredients.
What's your process for creating a new cocktail? And what inspired you in the first place?
Inspiration comes literally from anything. It can be food, perfume, everything that can be translated into a cocktail. The process starts with understanding the spirit. Flavour profile and aroma. After this, the drinks need to be put in test and be judged by the team.

Being happy with what I do and make other people happy while being creative!
What are some current trends you’ve seen in the cocktail market?
Sustainability. Low abv.
Where do you see yourself in five years?
Somewhere warm, in flip flops.
If you weren't in the drinks industry, what do you think you would be doing now?
I would be trying to find the way in.
Your biggest career influencer?
All the people that taught me working ethos, starting from my family.
First drink you ever tried?
The family produced wine. First mixed drink Tequila Sunrise. (It was a really long time ago haha).
We've all had a bad experience with at least one drink. What drink do you most avoid?
Sambuca and flaming shots of any colour.
Your hangover cure?
Sleep. Coffee, food, lemonade.
£10m comes to you. What do you do next?
Help the people I love, then open my own beach bar so I can be there in 5 years from now, wearing flip flops.
Bar or cellar at home?
Rose from Provence.
Whisky / Rum.
Margarita. No matter where or what time of the day.
