Garnish: Lemon Wedge
Method: Build in a clean highball glass - Squeeze fresh lemon juice into glass, add sugar and Bombay Sapphire. Stir. Add cubed ice, Stir again then lengthen with soda. Add more ice to near top of glass and stir for a final time. Garnish with a wedge of lemon and a clear straw. Serve with a smile and enjoy!
Notes: A twist on the classic Collins which was derived during "The Great Tom Collins Hoax of 1874" - a truly great story! Why? This cocktail provides a great way of testing if a bartender can balance the 4 cocktail elements of sweet/sour/alcoholic/non-alcoholic.
Amount Ingredient
50 ml Bombay Sapphire - Gin
25 ml Fresh Lemon Juice
15 ml Sugar Syrup (2:1 ratio sugar to water)
50 ml Homemade Earl Grey Soda Water (soda water infused with Earl Grey
