Method:Shake and fine strain.
Place raspberries in boston glass, muddle gently.
Then add egg white to boston glass, follow with lemon juice and then castor sugar,
Add gin finally, then fill with lots of ice and cap with boston tin.
Shake hard and well, Check balance, adjust if needed.
Strain into chilled coupette and garnish with a floating raspberry and spray a little lemon zest oil over surface.
