Method: Combine the first four ingredients in a sous-vide or water bath and cook at 75 degrees Celsius for 3 hours (or combine in the bottle and let sit for a day). Make sure the sugar is dissolved. Then remove all the bits and add the red wine. Serve in a wine glass over ice. Discard a grapefruit zest if you have it. Enjoy over dinner.

250 ml Nardini - Bianca 40
750 ml A Mano - Primitivo di Puglia 2017
2 slice(s) Dehydrated Pineapple
150 grams Cacao Nibs
50 grams Demerara Sugar
