Garnish: Pineapple Leaves, Grapefruit & Rosemary
Method: Add all ingredients to shaker and double strain into a hig with ice, garnish with pineapple leaves, grapefruit and rosemary. This drink is incredibly intense and complex and delivers herbal high notes along with complex smokey tropical depth.
Notes: What is a sherbet? - A combination of citrus fruit peel and sugar which are pounded together to draw out the oil from the skin into the sugar, citrus fruit juice is added and the mixture is fine strained. Why use sherbet? - The oil adds a very long finish and intensity to the drink. What is a shrub? - A combination of fruit, sugar and vinegar. Why use a shrub? - Shrubs add a unique sweet and sour tone that is unlike sugar and citrus juice, our pineapple and all spice shrub adds vibrancy to our pina colada that wouldn’t be possible without it. What is a tincture? - A combination of very strong grain alcohol, water and spice, the flavour of the spice in extracted into the alcohol mixture. Why use a tincture? - It allows one to add very strong flavour without sugar, you can keep building the layers and complexity whilst keeping balance.

50 ml Reposado
10 ml Pineapple All Spice Shrub
15 ml Chartreuse - Yellow
5 ml Lime Sherbet
20 ml Fresh Lemon Juice
20 ml Zombie Mix: Equal parts, Pineapple, Grapefruit, Orange
10 dash(es) Rosemary Tincture
8 Mint Leaves
