Method: Mahiki Club' signature cocktail. Appleton VX and a hint of Sailor Jerry, shaken with fresh pear and strawberry purees, lemon, sugar and creme de fraise, served long and topped with Cava!
Notes: The club, Mahiki's biggest selling drink. Mahiki, in Polynesian mythology means the path that leads to the Spirit Land. The dead must walk along this path, either alone or in procession, in a deep cavern, abyss or seaside cave. Others say that the dead walk towards the rising sun. Let's say Mahiki is 'the path to the underworld'.
Origin: When Michael Butt and I created this drink, we wanted to do a signature drink for Mahiki Club, the drink that would sell the most, and become our most recognisable drink. The brief was a red drink topped up with fizz - so we made a long drink topped up with Cava. It takes its root from the Russian Spring punch, or the match spring punch. In the UK, any drink with strawberry and raspberries topped up with champagne is always a Winner!!

25 ml Appleton - Estate VX
10 ml Sailor Jerry Rum
15 ml Pear Puree
10 ml Strawberry Puree
25 ml Lemon Juice
10 ml Briottet - Creme a la Fraises des Bois (Strawberry)
20 ml Monin - Gomme (Sugar Syrup)
75 ml Faustino - Brut Reserva
