Game Wine Pairings

Red wines dominate our pairings with nothing overly tannic. Depending on the dish, styles that work best range from red Burgundies, or those from Northern Rhone can always be relied upon in the case of any game, with pinot noirs, shiraz and Beaujolais featuring too. The richness and potent flavour of game results from the hanging of it for up to several days (depending on the animal), and ranges in 'gamey' potency levels.
