Notes: Paremsan is a versatile cheese when pairing with wines. Sparkling-white, dry wines have the acidity to cut through the fat of the cheese and it's fruity flavours pair well and their bubbles leave the palate fresh and wanting for more. More typically parmesan is paired with red wines - Barolo (nebbiolo), Amarone, Valpollicella, Chianti (sangiovese) or a Californian Zinfandel.
