Following the Greek war of independence, the government of the day decreed that the anise flavoured spirit (think spicy licorice), may only be called Ouzo if produced in Greece. Ouzo is flavoured with aniseed and other aromatic herbs.

Traditionally drunk cold with Greek appetisers and meze dishes, it turns 'milky' like French anise when water is added .
