The juniper in the spirit is balanced with soft sweetness from raspberry and rose. With no quinine in the mixer, the gin’s secondary botanicals, typically citrus, cassia and coriander weave in and out of the dry, leafy finish of the drink. Naturally light in sugar, a delightful alternative to a G&T.

To design a truly bespoke botanical mixer for gin, our approach has been to look beyond the juniper into the garden of secondary botanicals where the gin distiller demonstrates their individuality like cassia, coriander, cardamom, and citrus.

We avoided the customary pairing of sugar and quinine to counterbalance the piney bitterness of the juniper instead using a soft sweetness from rose and raspberry extracts. Without their all-too-frequent accompaniment of lashings of sugar, these flavours offer an evocatively light and summery characteristic.

The dry, leafy secondary flavours from this initial combination merge seamlessly into the sage and other botanicals in the Sekforde, giving a cool and subtle backdrop to enjoy the finish of the gin in a way which is simply impossible with a standard tonic.
