Cynar is the amaro or bitters of choice for the cognoscenti of the Italian Veneto. It is made from a subtle mix of aromatic herbs with artichoke leaves; the plant from which it gets it\\\'s name, \\\'Cynara scolymus\\\'. It has a bittersweet flavour, more astringent than Campari, with a deeper red-brown colour. It is sometimes drank as an digestif with a dash of soda and ice, but it\\\'s more commonly used in a Venetian aperitif called a \\\'Spritz\\\'. To make one, take a large wine glass or tumbler, add a measure of Cynar, a small glass of white wine, top up with soda, and add ice with a slice of lemon.
