MURRAY McDAVID - Port Morant Guyana 1991Premium Guyana Rum
Original cask : Bourbon Ace cask : Guigal Hermitage Syrah Red Wine
Colour Deep, liquid gold.
Body Rich and generous with a solid underpinning of sweet oak.
Aromas Opens with a beautiful rum bouquet, slightly oily and bursting with oak tannin and vanilla overtones. This is followed by hints of lemon and butterscotch, mulberry, blueberry and aniseed balls. Then it changes to raisins, walnuts, ripe tropical fruit and peppermint. The red fruits from the wine casks meld superbly with the créme brulee vanilla of both the cask and the cave. I love that mahogany oil note that really good Guyana Rum has in abundance.
Palate Lashings of soft brown sugar, candied almonds and orange rind excite and stimulate the palate and the oaky oils bring a succulent viscosity to the taste. It is a focused delectable, traditional rum with the fruity blueberry/cinnamon/ honeyed clove bringing more unctuous flavours to an already excited palate. A total fusion of all things good in traditional made rum.
Finish Endless - it never wants to leave and you don't want it to.
