The colour is an intense brooding blackness with touches of purple at the rim. The nose is an opulence of classical Barossa Cabernet blackcurrants and violets. A great generosity of flavour and velvet fruit reined in by the fine chalky tannins on the finish.
The 2004 vintage is held in high regard in the Barossa, giving red and white wines of excellent regional and varietal character. Premium Cabernet Sauvignon vineyards in Light Pass and Tanunda districts of the Barossa Valley. Fermented & macerated on skins for up to 2 weeks with some partial barrel fermentation. Following pressing and clarification, the wine was matured in French oak hogsheads for approximately 18 months.
Mentor is an ideal accompaniment for rich duck, goose and game dishes. It is superb with oxtail, braised lamb shanks and wonderful with a fine aged cheddar.
