Mid amber lightening to green gold in colour.

The aroma of this wine is utterly tantalising. It has deep woody notes of an oloroso but also some of the verve and pungency of an amontillado. The suggestion is of burnt peel and crystallised fruits, a vinous Christmas pudding.

The tertiary character of the aroma - complex, developed character - follows through to the palate which is lavished by a collage of rich, concentrated dried fruit flavours. But to balance the richness is a fresh streak of cleansing acidity.

Ideally matched to a large, comfortable leather armchair. This is a comtemplative wine and drinks very well unaided by foods. But it is happy with tangy cheese or dried figs and nuts at the end of dinner.

There is no particular benefit to keeping this wine except as a hedge against it becoming temporarily unavailable. This may happen as only a third of its small solera may be bottled each year.

96% Palomino, 4% Pedro Ximenez.
