The grapes were hand picked during the first two weeks of May and transported in plastic boxes to the winery, where they were gently crushed and deposited into stainless steel tanks to begin fermenting immediately. Alcoholic fermentation was carried out at 28 - 29 degrees C (82 - 84 degrees F) with two pump overs daily. Because the grapes in this wine come from different blocks of the same vineyard, post-fermentation maceration time varied from 10 to 26 days in accordance with the development of each lot. The wine was aged for 8 months in French and American oak barrels to round out the wine and add texture to the palate. Once the final blend was made, the wine was cold decanted and lightly filtered before bottling
