Hill's Absinth (the 'e' is dropped in the Czech spelling) is produced in a small distillery within the Bohemian town of Jindrvuc Hradec. The family firm of Hill's Liquere (run by Radomil Hill) has been producing absinth since the 1920's.
The cognoscenti follow an intriguing ritual. A teaspoon of of suger is dipped into absinth and lit. When the suagr has slighlty caremelised, it is poured into the glass. The mixture is stirred and the flame doused with an equal measure of water.
