Domaine de Bachellery
Bachellery's vineyards are situated alongside the ancient Via Domitia Romana, facing the Mediterranean sea in the heart of the Languedoc , in the Béziers region. the Domaine de Bachellery is a very old estate, listed in the city's records since the middle ages, and in the early 1980s was taken over by the Julien family, who have wine running through their veins. Over the last 25 years Bernard Julien has taken it upon himself to rejuvenate the estate, starting in the vineyards and following the winemaking process through to the very end backbreaking work, since the vineyards are on clay and limestone soils with lots of pebbles and stones. The winery is now very modern and all the grapes are thoroughly destalked, and fermented under temperature control. the red wine is matured in large french oak barrels and the white, which is often described as a chablis look-a-like, is unoaked and left on the lees over the winter.
