The distinction lies in approximately one-third of III.1 undergoing a one-month finish in fresh 50-litre ex-Pedro Ximénez casks. This meticulous process offers a compelling illustration of how finishing can subtly reshape a whisky's character, culminating in an expression of exceptional intensity. The nose reveals a creamy quality, interwoven with fresh berries, macadamia, and a hint of dark chocolate confection. Underlying notes of coffee bean, subtle leather, and rich toffee, familiar from Series III, are present, evolving into more perfumed nuances of crème fraîche and fruit and nut. On the palate, it exhibits a notably rich and viscous texture, surpassing its predecessor. Flavours of dates and raisins are prominent, joined by a delicate prune note, all enveloped in a persistent embrace of dark chocolate. This contributes to a profound sense of intensity. The finish is long and satisfying, characterised by layers of dense chocolate, cocoa mousse, and coffee cake.
